
Smoked Salmon frittata
Ingredients:

1 tbsp olive oil

salt and pepper to taste

2 x 100g Prime Smoke smoked salmon shavings

120g brie cheese, sliced

2 roasted red peppers, cut into long strips

2 tbsp chopped fresh parsley

180ml creme fraiche
-
8 large eggs
-
salad rocket
-
1 bunch spring onions
-
1 tsp chopped mixed fresh herbs (parsley, mint, dill)
Serves 8
Method
Preheat the oven to 180℃. Heat the oil in an ovenproof frying pan. Add the spring onions and saute over high heat until soft and light brown. Add the rocket and stir it around in the hot pan until it has only just wilted, then take the pan off the heat.
Break the eggs into a bowl and whisk in 3 tbsp of creme fraiche. Stir in the chopped parsley, roasted red peppers, brie cheese, spring onion and rocket mix and smoked salmon. Season well with salt and pepper.
Return the pan to stove and cook over medium-low heat until the eggs begin to set. Place the pan in the oven and bake until the eggs are set and the frittata is lightly puffed. Remove and cool slightly or to room temperature.
Mix the remaining creme fraiche with the chopped herbs and some seasoning to taste.
Enjoy warm or at room temperature.
