
Smoked Salmon Mini Croquettes
Ingredients:

3 medium potatoes

1 egg

2 tbsp chopped mixed fresh herbs (parsley, chives, dill)

1/2 tbsp salt

Freshly ground black pepper

100g Prime Smoke shavings or slices

1/2 cup roasted breadcrumbs

3 tbsp oil

Method
Peel potatoes and cook in boiling salted water for about 20 minutes or until tender. Drain, keeping two tablespoons of cooking water. Cook slightly.
Add egg, herbs salt and pepper, Beat until smooth. Roughly chop Prime Smoke Salmon slices or pieces and mix into potato mixture. Take tablespoons of mixture and shape into cylinders about 5cm long. Roll in bread crumbs.
Brush oil over the base of an ovenproof dish. Place croquettes in dish and turn to coat. Bake at 200ºC for 10 minutes or until crumbs are golden. Serve with your favourite dipping sauce.
